Varieties History
The groves of Castelvetrano have been cultivated for millennia, nurtured by the Belìce Valley’s unique terroir. Today, these same trees gift us olives that express both ancestry and innovation.
Health Wellbeing
According to the European Food Safety Authority (EFSA), extra virgin olive oil is a natural source of vitamin E, protecting cells against oxidative stress. Its monounsaturated fats help maintain normal cholesterol levels, while its polyphenols provide antioxidant effects that support overall vitality. For us, these health benefits are not marketing – they are the simple truth of nature, bottled.
Climate Terroir
Just 6 km from the Sicilian coast, our groves thrive under a warm, temperate climate: long summers, mild winters, and 500 mm of annual rainfall. Classified under the USDA Soil Taxonomy as a xeric humidity regime, this environment ensures balanced growth, resilience, and complexity of flavor.
Harvesting Milling
Each season writes its own story. At the perfect moment, olives are handpicked and swiftly delivered in ventilated crates to the mill, never waiting, never warming. Within 12 hours, they are weighed, defoliated, washed, and milled at temperatures below 28°C for less than 30 minutes. This cold extraction preserves the fruit’s vitality, yielding oils of brightness and purity.
Storage Preservation
Once extracted, the oils rest in 316L stainless steel silos, blanketed under nitrogen, safe from oxidation. They are filtered or decanted naturally, then packed only upon request, a guarantee that what reaches the table is as fresh and alive as the day of harvest.
